Garlic Roasted Broccoli

My husband loves broccoli. When they say kids hate broccoli, well this guy is the opposite. Sometimes I use this as an addition to other main courses, and he eats half the tray before I get to the point of needing to add it. I’ve learned I need to make extra if he’s home, since he eats it like candy.

That being said, nothing wrong with wanting to eat your greens. I hope our little girl will follow in his footsteps. We go through quite a bit of broccoli between the two of us, being it is easy and tastes too good. Luckily, since we joined Costco, we’ve been able to score some massive bags of organic broccoli for great prices. Not that we really need to be purchasing food in bulk for two people, but it gives us a great excuse to eat more vegetables.

Now this side dish is one of the easiest I can show you. All you need are the broccoli, oil of choice, salt, pepper, and garlic. You can get creative and add to it, but for the basics, that’s it. That an oven, and a baking sheet. But this is definitely a snack for those of us who find it hard to go stand by the stove for any length of time.

Garlic roasted broccoli

Preparation Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes
Yield: 4 servings

Ingredients

12 oz broccoli florets (1 standard bag of fresh broccoli)
1-2 tbsp oil (olive or canola work well)
1 tsp garlic powder
salt to taste
1/4 tsp pepper
optional: 1/4 tsp onion powder

Directions

  1. Preheat oven to 400°F
  2. On a baking sheet, line with parchment paper or grease pan
  3. Toss broccoli with oil to coat in a bowl
  4. Mix in spices well to distribute evenly
  5. Spread evenly on baking sheet
  6. Bake for 30 minutes, or until ends start to darken. We like ours a bit crispy. 
  7. Serve fresh.

Enjoy this as a side dish with chickpeas or lentils. 🙂
