Easy Vegan Cashew Cream for Coffee or Cooking and Baking

Cashew Cream Vegan Coffee Creamer

Plant based doesn't mean you have to cut out your favorite coffee drinks or baked goods with cream. Substitute cream with this delicious cashew cream vegan coffee creamer and use it in your coffee or even in baked goods. If you want to use it in curries be sure to omit the vanilla and maple syrup!

Ingredients
  

  • 1/2 cup cashews
  • 1 cup water

For Vanilla Sweet Cashew Cream

  • 2 tsp vanilla extract
  • 2 tbsp maple syrup

Instructions
 

  • Soak the cashews in water for at least 4 hours. They should feel soft if you squeeze them.
  • Drain the cashews and dump them in a blender. Add the water and pulse until smooth.

Vanilla Sweet Cream

  • Add the vanilla extract and maple syrup. Continue to blend. The nuts should be blended into a smooth milk. If there are still chunks, continue to blend until it's all smooth.
  • Use right away, or store in an air tight container for up to a week in the fridge.

Notes

This cream goes great as a vegan alternative to heavy cream or coconut cream. It works well in coffee as well as baking and cooking.
