Vegan Almond Joy Oatmeal

This easy stovetop oatmeal recipe is a vegan Almond Joy flavored breakfast made with steel-cut oats, coconut, cocoa powder, plant-based milk, almonds, and sweetener of choice.

Ingredients
  

  • 6 tbsp steel-cut oats 3/8 cup
  • 1 cup plant-based milk
  • pinch salt
  • 1.5 tbsp shredded coconut
  • 2 tsp cocoa powder or cacao powder
  • 1 tbsp chopped almonds
  • ½ tbsp seed mix (flax, chia, hemp hearts) use what you have!
  • 1-2 tsp maple syrup (or sweetener of choice)
  • optional: chocolate chips or syrup for topping

Instructions
 

  • In a saucepan, mix together the oats, milk, and salt.
  • Bring to a simmer over medium heat and allow the oats to begin absorbing the milk. Stir occasionally to prevent burning to the pan. About 5 minutes.
  • As the mixture thickens, add cocoa powder, coconut, almonds, and any seeds. I use a blend of chia, ground flax, and hemp hearts, but any of these are good. They just add some extra fiber and good fats.
  • Continue to cook until the mixture reaches your desired consistency. This generally takes about 5 minutes. Give it a taste and add any sweetener you'd like.
  • Spoon into a serving bowl and top with additional shredded coconut, chopped almonds, and any chocolate drizzle or chocolate chips. Enjoy!

Notes

Cacao powder can be used in place of cocoa. I prefer cacao for the less processed version.
You can use other oats but the amount of milk will be different. Start with a little less and add as needed.
You can use chocolate chips in place of cocoa for a more candy bar flavor, but wait to add them until the end so the chocolate doesn't burn to the pan.
