Strawberry and peanut butter stuffed vegan french toast is an easy and filling breakfast that will please all.

Ingredients
  

  • 6 pieces sliced bread
  • ½ cup almond milk
  • ½ tsp cinnamon
  • ½ tbsp ground flax
  • 1 tbsp warm water
  • ½ tsp vanilla
  • pinch salt
  • 5 strawberries, thinly sliced
  • 3 tbsp creamy peanut butter
  • optional maple for topping
  • optional fruit for topping

Instructions
 

  • Mix together the warm water and flaxseed in a small bowl.
  • In a bowl or shallow dish large enough to dip the toast, mix together the milk, cinnamon, flaxseed, vanilla, and salt.
  • Slice the strawberries thinly. Spread the peanut butter each piece of bread and line strawberries on one side. Sandwich them together.
  • Dip the bread in the milk mixture for 10 seconds on each side.
  • On a non-stick skillet cook the toast on medium-high heat for 2-3 minutes on each side.
  • Repeat for the other toasts.
  • Top with fruit, maple syrup, chocolate syrup, drizzled peanut butter, or any other topping.
