Vegan Stuffed French Toast

- 6 pieces sliced bread
- ½ cup almond milk
- ½ tsp cinnamon
- ½ tbsp ground flax
- 1 tbsp warm water
- ½ tsp vanilla
- pinch salt
- 5 strawberries, thinly sliced
- 3 tbsp creamy peanut butter
- optional maple for topping
- optional fruit for topping
Mix together the warm water and flaxseed in a small bowl.
In a bowl or shallow dish large enough to dip the toast, mix together the milk, cinnamon, flaxseed, vanilla, and salt.
Slice the strawberries thinly. Spread the peanut butter each piece of bread and line strawberries on one side. Sandwich them together.
Dip the bread in the milk mixture for 10 seconds on each side.
On a non-stick skillet cook the toast on medium-high heat for 2-3 minutes on each side.
Repeat for the other toasts.
Top with fruit, maple syrup, chocolate syrup, drizzled peanut butter, or any other topping.
