Peanut Butter Banana Nice Cream

What better dessert than a healthy dessert? Peanut butter banana nice cream was something I’ve tried in the past, but never seemed to get it quite right. Finally since we’ve upgraded our blender to a Vitamix, I thought I should give it a try with the frozen dessert setting. I think it would also have worked as well in our food processor, but the blender is so convenient since we use it daily anyway.

This recipe is as easy as it gets: 2 ingredients. All you seriously need is peanut butter and frozen bananas. Easy as that. Make sure you get your frozen bananas in the freezer with enough time to freeze prior to making this, otherwise you’ll end up with what resembles slop, and nobody wants that when all you really want is ice cream!

That being said, we’ve had a pretty chaotic week, and with our recent purge of eating out, I’ve been trying to come up with options to have at home that can somewhat curb any cravings we’re having. This week alone we’ve enjoyed this peanut butter nice cream, a few different types of granola, squash burritos, quinoa nachos, cauliflower tikka masala, beer chili mac, and a cauliflower pizza. We’ve given the Thug Kitchen cookbook some use, making some modifications to meet our desires for these meals, but we’ve really enjoyed some of them so far.

It’s amazing what not eating out can do to your wallet. Just in two weeks (we have eaten out twice for our anniversary and met up with my sister and her fiance), we’ve still saved a good amount of money. So thankful for this push to do the healthy and wallet-friendly thing. Snacks like this peanut butter banana nice cream save almost $4 a serving versus going to Coldstone or Dairy Queen (not that we went to those places a lot, but with the Pup Cups, we did make a few trips with the dog). 😛

Since discovering how to make this nice cream though, we’ve made it at least 3 times this week. Sure bananas are high in sugar, but if you aren’t adding any additional sugar, it’s a natural fruit sugar. That and nut butter, which is a good source of protein are the only two ingredients. If you’re worried about the calorie count, you can even opt for PB2. I personally prefer the natural peanut butter from Costco, but any nut butter works!

Being a mom has presented it’s challenges, eating in being one of those. But as we’re getting the hang of this thing called parenthood, I’m getting more time to play around in the kitchen again, which I am very thankful for. This is definitely one of those recipes that is incredibly versatile and will definitely be expanded upon. For now, enjoy some peanut butter banana nice cream. Top with some chocolate chips (vegan chocolate chips for an entirely vegan dessert), or chopped nuts for added texture.

Peanut Butter Banana Nice Cream

Prep Time: 2 minutes
Total Time: 5 minutes
Yield: 2 servings

 

Ingredients

2 bananas sliced and frozen
2 tbsp peanut butter 

Directions

  1. At least a few hours (preferably the day prior) slice bananas and place in freezer.
  2. Remove from freezer about 30 minutes prior to making nice cream (or defrost for a minute in the microwave if you’re impatient)
  3. Place in blender or food processor with peanut butter
  4. Pulse until banana chunks become smooth
  5. Scoop into bowls and serve for a soft serve texture, or place in freezer for harder consistency

Keep in mind, there is 0 g of added sugar here if you’re using natural peanut butter and bananas without sweetener. You can add in nuts for a chunkier nice cream. Let me know what you think!
