Breakfast is my favorite meal of the day, some of that may be because of a major sweet tooth but there are so many delicious things to get with breakfast. My personal favorites are pancakes and french toast. Once discovering vegan french toast, I was so excited. I loved going out for breakfast back before we had our daughter, and getting some stuffed french toast. Learning how to make vegan stuffed french toast from home is one of the best things I’ve learned.
With the season, fresh fruit is much more available and less expensive. This makes incorporating it into everything that much better. So this stuffed french toast includes strawberries because my daughter loves them, but you could easily swap for banana if you don’t have strawberries.

How to make this vegan stuffed french toast?
- Mix the flaxseed and warm water together in a small bowl. Set aside.
- In a shallow dish or bowl that the bread will fit in, mix together the milk, flaxseed, cinnamon, vanilla, and salt.
- Spread peanut butter on one side of each piece of bread and spread sliced strawberries on one. Sandwich two pieces together.
- Dip each side of the sandwiches in the milk mixture.
- In a non-stick skillet, over medium-high heat, cook the french toast for 2-3 minutes on each side until it starts to turn golden brown.
- Repeat for each sandwich.
- Top with more fruit, drizzled peanut butter, maple syrup, chocolate syrup, or another topping.

Vegan Stuffed French Toast
Ingredients
- 6 pieces sliced bread
- ½ cup almond milk
- ½ tsp cinnamon
- ½ tbsp ground flax
- 1 tbsp warm water
- ½ tsp vanilla
- pinch salt
- 5 strawberries, thinly sliced
- 3 tbsp creamy peanut butter
- optional maple for topping
- optional fruit for topping
Instructions
- Mix together the warm water and flaxseed in a small bowl.
- In a bowl or shallow dish large enough to dip the toast, mix together the milk, cinnamon, flaxseed, vanilla, and salt.
- Slice the strawberries thinly. Spread the peanut butter each piece of bread and line strawberries on one side. Sandwich them together.
- Dip the bread in the milk mixture for 10 seconds on each side.
- On a non-stick skillet cook the toast on medium-high heat for 2-3 minutes on each side.
- Repeat for the other toasts.
- Top with fruit, maple syrup, chocolate syrup, drizzled peanut butter, or any other topping.
