Vegan Pineapple Gelato

Sweet tooth doesn't mean a pint of ice cream. This vegan pineapple gelato is just two ingredients and so delicious.

Ingredients
  

  • 2 cups pineapple, chopped and frozen or use frozen chunks
  • 1 tbsp lemon or lime juice

Instructions
 

  • Cut and freeze pineapple chunks the day before (or use frozen chunks)
  • Measure out and add ingredients to food processor or blender
  • Pulse until frozen chunks are broken into small pieces
  • Scrape down the sides as it sticksLet it run until it forms a smooth consistency (see photo above)
  • Remove from container and serve or freeze for thicker consistency

Notes

You can also dilute this slightly if you have issues with blending. Either let the frozen chunks thaw or splash some water or coconut water in.
