Garlic Sautéed Tomatoes and Asparagus

This easy vegetable dish is a great way to incorporate easy veggies into a meal. Sauteed garlic, cherry tomatoes, and asparagus are a great addition to a bowl of rice and veggies or would make a great accompaniment to proteins.

Ingredients
  

  • 10 oz cherry tomatoes halved, grape tomatoes also work
  • 1 tbsp olive oil
  • 10 oz asparagus chopped
  • 1 tbsp minced garlic
  • ¼ tsp dried basil
  • salt to taste

Instructions
 

  • Heat olive oil in a pan and add garlic. Allow it to sizzle before adding the halved tomatoes.
  • Saute the tomatoes until they start to break down (about 5 minutes).
  • Stir in the basil and salt. Then add the chopped asparagus.
  • Cover with lid and cook for about 7 minutes, stirring occasionally. Test a piece after about 5 minutes to make sure it is crunchy to liking and continue cooking until it is soft enough. We like to eat ours with a bit of a crunch.
  • Serve over rice or as a side to a protein.
