Vegan Almond Joy Oatmeal

Oatmeal is something I look forward to in the morning, especially when it almost tastes like a treat instead of breakfast. I’ve become a big proponent of reducing sugar in foods being I never want to put myself at risk of diabetes, so I am cautious about how much sweetener I use, which is true for these oats as well. I am excited to share this vegan almond joy oatmeal recipe because it is delicious and full of healthy fiber and protein.

Growing up you could never have convinced me to eat an Almond Joy, the thought of coconut freaked me out. But as an adult, I absolutely LOVE it. I hope you feel the same. Coconut is so versatile and packed full of healthy fats and fiber. Oatmeal is also really healthy, a great source of beta-glucans which is soluble fiber. This almost tastes like a healthy almond joy bar, without all the added sugar. If you don’t really care about how much sugar you add, or are making this as a treat, you could always add chocolate chips or extra sweetener and really get that candy bar flavor.

What you’ll love about this vegan almond joy oatmeal?

  1. Vegan! Flavored with cocoa powder, coconut, almonds, and maple syrup, it’s a simple and delicious breakfast.
  2. Simple ingredients. Oatmeal, milk, salt, cocoa powder, coconut, almonds, and your choice of sweetener is all you need!
  3. Quick. Made in about 10 minutes, this recipe is perfect for a busy morning.

How to make vegan almond joy oatmeal?

  1. In a small saucepan, mix together the steel-cut oats, milk, and salt. Bring to a simmer over medium heat.
  2. Once the oats start to absorb the milk and the texture is thickening, you can add the oats, almonds, seed mix, and coconut. Any sweetener can be added now, or at the end to taste.
  3. Once the texture is thickened to your liking, remove the pan from heat and serve in a bowl topped with extra coconut, almonds, and drizzled chocolate.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Calories 549kcal

Ingredients

  • 6 tbsp steel-cut oats 3/8 cup
  • 1 cup plant-based milk
  • pinch salt
  • 1.5 tbsp shredded coconut
  • 2 tsp cocoa powder or cacao powder
  • 1 tbsp chopped almonds
  • ½ tbsp seed mix (flax, chia, hemp hearts) use what you have!
  • 1-2 tsp maple syrup (or sweetener of choice)
  • optional: chocolate chips or syrup for topping

Instructions

  • In a saucepan, mix together the oats, milk, and salt.
  • Bring to a simmer over medium heat and allow the oats to begin absorbing the milk. Stir occasionally to prevent burning to the pan. About 5 minutes.
  • As the mixture thickens, add cocoa powder, coconut, almonds, and any seeds. I use a blend of chia, ground flax, and hemp hearts, but any of these are good. They just add some extra fiber and good fats.
  • Continue to cook until the mixture reaches your desired consistency. This generally takes about 5 minutes. Give it a taste and add any sweetener you'd like.
  • Spoon into a serving bowl and top with additional shredded coconut, chopped almonds, and any chocolate drizzle or chocolate chips. Enjoy!

Notes

Cacao powder can be used in place of cocoa. I prefer cacao for the less processed version.
You can use other oats but the amount of milk will be different. Start with a little less and add as needed.
You can use chocolate chips in place of cocoa for a more candy bar flavor, but wait to add them until the end so the chocolate doesn’t burn to the pan.
