This vegetarian pomegranate holiday salad is a delicious vegetarian salad that includes pecans, feta, pomegranate arils, and a homemade balsamic dressing.

1 whole pomegranate arils ½ bunch of kale, chopped 1 head of romaine, chopped ½ cup chopped pecans ¼ cup feta Balsamic Dressing ¼ cup olive oil 3 tbsp balsamic vinegar 1 tbsp dijon mustard ½ tsp minced garlic salt and pepper
Make the dressing by whisking all ingredients together in a bowl.
Wash and chop kale and romaine leaves.
Cut open pomegranate and remove seeds.
Mix chopped kale and romaine together in a bowl. Sprinkle pomegranate arils over top.
Next sprinkle the feta and pecans over top. Mix well and divide into bowls.
Top with balsamic dressing to taste.
