This vegetarian pomegranate holiday salad is a delicious vegetarian salad that includes pecans, feta, pomegranate arils, and a homemade balsamic dressing.

Ingredients
  

  • 1 whole pomegranate arils
  • ½ bunch of kale, chopped
  • 1 head of romaine, chopped
  • ½ cup chopped pecans
  • ¼ cup feta

Balsamic Dressing

  • ¼ cup olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp dijon mustard
  • ½ tsp minced garlic
  • salt and pepper

Instructions
 

  • Make the dressing by whisking all ingredients together in a bowl.
  • Wash and chop kale and romaine leaves.
  • Cut open pomegranate and remove seeds.
  • Mix chopped kale and romaine together in a bowl. Sprinkle pomegranate arils over top.
  • Next sprinkle the feta and pecans over top. Mix well and divide into bowls.
  • Top with balsamic dressing to taste.
