Easy Blender Date Caramel
A delicious and easy vegan caramel made with just a few simple ingredients. This makes great fruit dip, topping for sticky buns, or any other use for caramel.

Instructions
If dates are fresh, pit them. If they are pitted and dried, soak for 5-10 minutes in warm water.
In a
food processor
or
blender
, combine the dates, 2 tbsp water, salt, and vanilla.
Blend or process until liquid forms. It may be slightly lumpy if you used dried dates that aren't soaked really well, but it still tastes great!
You may need to add more water to get it to desired consistency. Do this slowly so you don't end up watering it down.
Eat fresh or store in the fridge for 1-2 weeks.
