A simple recipe for the most delicious oven roasted sweet potatoes to use as a side dish or even a main. These can be stuffed, peeled and served as sweet potato mash, or served as is with a dash of cinnamon or butter.
Line a baking sheet with aluminum foil or parchment paper.
Poke holes in the potatoes with a fork, about 6-8 for medium sized potatoes.
Drizzle olive oil and salt over the potatoes and rub it in.
Bake for 35-45 minutes, start checking if you can easily pierce the potato with a fork or knife. When it easily pierces the potato, they are done.
Remove from heat and serve hot with your favorite toppings, or allow to cool, peel, and mash for sweet mashed potatoes.
Notes
Depending on the size of the sweet potatoes the baking time will vary. I tend to buy long and thin potatoes for baking, but if you get really thick ones, you'll need to bake them longer.
