Fall is here, which means we’re getting into all the favorites. Pumpkin, apples, sweet potato, soup, and changing colors. One of the many fall things I love is sweet potatoes. They’re so versatile, packed full of healthy vitamins and minerals, and can be eaten year-round. This particular recipe is easy because it doesn’t even require using a knife. You just need to wash, drizzle with salt and oil, then bake.

Baked sweet potatoes are great because they can be enjoyed in many ways. One of my favorites is drizzled with peanut butter, nuts, cinnamon, toasted coconut, and berries if you have them. They also make great breakfast bowls by peeling the skin off and mashing the inside. You can top with your favorite bowl toppings like a dollop of yogurt, nut butter, jam, berries, seeds, fruit, and chocolate chips/cacao nibs. You can also make these savory by throwing a small scoop of butter with salt and some rosemary. Go as far as a Mexican-themed potato with your favorite toppings such as spicy black beans, guacamole, sauteed onion and peppers, and melted cheese.

What you’ll love about these easy baked sweet potatoes?

  1. They’re super versatile. You can eat them plain as a side dish, seasoned, stuffed, or even made into a mash for breakfast bowls. There’s no right way to enjoy a sweet potato.
  2. Sweet potatoes are vegan. No animal products are found in potatoes. 🙂 Unless you top them with butter, yogurt, or cheese that contains dairy.
  3. Naturally gluten-free. Since they contain no grain, they are gluten-free!
  4. They make great leftovers. Keep them whole and you can reheat them for an easy side or a quick breakfast.

How to make these easy baked sweet potatoes?

  1. Preheat oven to 400°F.
  2. Wash the sweet potatoes thoroughly and dry.
  3. Line a baking sheet with aluminum foil or parchment paper.
  4. Poke holes in the potatoes with a fork, about 6-8 for medium sized potatoes.
  5. Drizzle olive oil and salt over the potatoes and rub it in.
  6. Bake for 35-45 minutes, start checking if you can easily pierce the potato with a fork or knife. When it easily pierces the potato, they are done.
  7. Remove from heat and serve hot with your favorite toppings, or allow to cool, peel, and mash for sweet mashed potatoes.

Notes

Depending on the size of the sweet potatoes the baking time will vary. I tend to buy long and thin potatoes for baking, but if you get really thick ones, you’ll need to bake them longer.
