Arugula Fig Salad [GF] [Vegan Friendly]

Fresh figs are delicious and this salad is a delicious balance of sweet and savory. It's hearty, filling, and so refreshing.

  • ½ red onion small onion, sliced
  • 7 oz arugula
  • 8-10 fresh figs quartered
  • ½ cup feta can sub violife feta for vegan
  • ½ cup roasted pecans

Salad Dressing

  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • t tsp maple syrup
  • tsp vanilla extract
  • salt and pepper to taste


  • Chop the onion and figs.
  • In a large bowl, mix together the arugula, pecans, chopped onions and feta.
  • Stir together the salad dressing ingredients and drizzle over the arugula mix.
  • Once mixed well, top with the figs, lightly stir to incorporate and serve!


This is a meal-sized salad. Feel free to reduce the portions and serve as an appetizer or side dish.
