One thing I really love about living in San Diego is all the fresh produce that’s available and locally grown. Coming from the midwest, it’s a big change because the growing season here is year-round and there is a huge variety of fresh fruits and vegetables that are locally grown. My husband helped his friend move and his friend’s family has a large fig tree. His mom sent him home with a huge bag full of fresh figs, which was such a treat. I’ve been having a blast eating fresh figs, but also baking with them and eating them on salads. This fresh fig arugula salad is my new favorite! It’s a perfect blend of sweet and savory, loaded with vitamins and minerals, and easy to throw together.

I’ve taken inspiration on the fig salad from Brittany from Eating Bird Food. She shares all these delicious savory fig salads and pizza on her Instagram story and when I got this big bag, I had a busy couple days in the kitchen. This salad is one we ate several times. The figs unfortunately did not stay good for very long so we had to eat them all in a short time (besides the bars we made with a fig jam), but needless to say a fig tree is on my list of trees to plant at our house.

What you’ll love about this fresh fig arugula salad?

  1. It’s a perfect blend of sweet and savory. If you haven’t yet tried a salad with fruit on it, you’re missing out!
  2. Gluten-free and can be made vegan with a substitution of vegan feta cheese.
  3. It’s hearty to keep you feeling full.
  4. Quick to make. If you are strapped for time for a good meal, this is a great option. It takes 15 minutes or less to throw together and it’s enough to keep you full.

How to make this fresh fig arugula salad

  1. Chop the onion and figs.
  2. In a large bowl, mix together the arugula, pecans, chopped onions and feta.
  3. Stir together the salad dressing ingredients and drizzle over the arugula mix.
  4. Once mixed well, top with the figs, lightly stir to incorporate and serve!

Ingredients
  

  • ½ red onion small onion, sliced
  • 7 oz arugula
  • 8-10 fresh figs quartered
  • ½ cup feta can sub violife feta for vegan
  • ½ cup roasted pecans

Salad Dressing

  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • t tsp maple syrup
  • tsp vanilla extract
  • salt and pepper to taste

Instructions
 

  • Chop the onion and figs.
  • In a large bowl, mix together the arugula, pecans, chopped onions and feta.
  • Stir together the salad dressing ingredients and drizzle over the arugula mix.
  • Once mixed well, top with the figs, lightly stir to incorporate and serve!

Notes

This is a meal-sized salad. Feel free to reduce the portions and serve as an appetizer or side dish.
