Easy 5-Minute Microwave Vegan Apple Pie Oatmeal (with Stovetop Version)

Fall is upon us! While it may not feel like it in Southern Cali, the produce in stores reflects it. I’m all about the flavors of fall with pumpkin and apple at the forefront of my food choices. If you haven’t noticed, one of my FAVORITE foods is morning oatmeal. Since my early days of motherhood, I’ve had a bowl of oatmeal almost every single morning. I’ve learned that it’s great for lactation, which was an incentive early on. But since I’ve gotten addicted. Luckily Costco sells big bags of steel-cut oats or similar. This vegan apple pie oatmeal that is made in under 5 minutes in the microwave or about 10 on the stove, is a new fall favorite behind my vegan pumpkin pie oats!

One of the perks about living in the midwest was that apples were always abundant. We had a cute community orchard near us where we could go get some apples, but it always seemed like a friend had someone with a tree or bags of extra apples. We actually had a whole bag that I moved down here with, so I’m still working my way through them (thankful for their extra long shelf life!). This oatmeal is one great way to use an apple a day! Plus it’s a great way to introduce a new texture of oats to my kiddo who is obsessed with applesauce. The bonus with oatmeal is it can be made QUICK, for mornings when you have a famished child who wants breakfast the second they get out of bed.

What you’ll love about these microwave vegan apple pie oats?

  1. Well for starters, they’re vegan. No worries about giving them to a lactose intolerant kid, or vegan friends. Also, as long as you use steel-cut or other certified gluten-free oats, they are gluten-free!
  2. Easy and quick. For mornings where you need a quick and easy breakfast, this is here for you. You will have food in under 10 minutes that is satisfying and keeps you full all morning. 
  3. Kids like this stuff. It’s a feat getting toddlers to eat new things, but this one is kid approved! You can always add a little extra maple syrup or nuts to get your kid to like it too.
  4. Healthy! Oats are packed with fiber, which is something we all know many of us don’t get enough of. 

How to make this vegan apple pie oatmeal?

  1. Start by peeling, coring, and cutting the apple. Make the pieces fairly small so they cook up quicker and are easier to stir in. 
  2. Mix all the ingredients together in a large bowl (if using the microwave method). Microwave oats always tend to boil over so using an XL bowl that’s microwave safe is a must.
  3. Cook for 2.5-3 minutes and check they are done. Depending on the power of your microwave and the type of oats you used, you may need more time. Steel-cut oats take longer than old fashioned or rolled.
  4. If you are planning to make on the stove, mix ingredients in a saucepan. Bring to a boil and then reduce the heat to a simmer. Cook for 5-8 minutes, or until the oats are cooked and at the desired consistency.
  5. Crush the graham cracker over the top and enjoy!

Vegan Apple Pie Microwave Oats

This easy vegan apple pie oats are a quick and microwave breakfast that is lightly sweetened. This is a great way to use those fall flavors!

Ingredients

  • ½ cup oats I use steel cut or Coach's Oats
  • cup almond milk
  • 1 apple chopped
  • 1 tsp cinnamon
  • 1 tsp sweetener maple syrup, coconut sugar, etc
  • pinch salt
  • 1 graham cracker crushed for topping

Instructions

  • Mix together the oats, almond milk, sweetener, salt, and cinnamon in a microwave-safe bowl. Make sure your bowl is extra large for the boil over that happens when you make oatmeal in the microwave.
  • Stir in the chopped apple (this works best if the apple is peeled but you can leave the peel on).
  • Microwave for 2.5-3 minutes (if you use steel-cut oats, you may need a bit longer based on the power of your microwave.
  • Remove from heat and check the oats are done. If you use steel-cut, you may need another minute.
  • Dilute with more almond milk to get desired consistency. Crush the graham cracker over the top and enjoy!

Stovetop Option

  • Mix all ingredients together (except the graham cracker) in a saucepan.
  • Bring to a boil, then reduce to a simmer for 5-8 minutes. The cook time depends on the type of oats you use (quick cooking, old fashioned and rolled will take just a few minutes, steel-cut will be more like 8-10 minutes).
  • Remove from heat when oats are done (taste them to ensure the texture of oat is good) and the consistency is at desired level. If they get too thick, you can stir in more milk.
