Easy Blender Vegan Date Caramel

Apples are currently abundant around here, and I’m finding all the ways to enjoy them! One thing that we like to do is just cut them up and dip them in peanut butter or other dips. I had the most decadent caramel apple dipped in nuts and chocolate and I can’t seem to get it out of my head. So I made an easy version of caramel at home with dates that can be made in the blender so I can dip the apples in it. I also love topping sticky buns with it because it’s sweet, but doesn’t have any refined sugar.

This stuff is easy to make in a blender or food processor so it’s really great. Simpler than making regular caramel. It’s also kid-approved, which is great because I let my toddler have some and I’m not too worried about letting her have some.

  1. Pit dates. If you are using dried dates soak them in warm water. 
  2. Add dates, water, salt, and vanilla to a blender or food processor
  3. Blend until smooth. Add more water to get to the desired consistency.
  4. Use fresh or store in the fridge for 1-2 weeks.

Easy Blender Date Caramel

Ingredients

  • 12 dates
  • ¼ cup water
  • ½ tsp vanilla extract
  • pinch salt

Instructions

  • If dates are fresh, pit them. If they are pitted and dried, soak for 5-10 minutes in warm water.
  • In a food processor or blender, combine the dates, 2 tbsp water, salt, and vanilla.
  • Blend or process until liquid forms. It may be slightly lumpy if you used dried dates that aren't soaked really well, but it still tastes great!
  • You may need to add more water to get it to desired consistency. Do this slowly so you don't end up watering it down.
  • Eat fresh or store in the fridge for 1-2 weeks.
