One of the best things I’ve made with veggies that were sitting in the pantry was this sautéed garlicky tomatoes and asparagus. My daughter’s favorite food is rice, and she loves asparagus, so this was just perfect. I hate to let produce go bad, so finding creative uses for the remainder of vegetables left in the fridge or pantry is always fun, and this one is so good, we’ve done it a few times just this week!
While this dish isn’t extremely filling, it is great for a hot summer day because it’s refreshing and light. I like to eat it over a bed of turmeric rice, but it would go great as a side dish to a protein, burger, or even with some quinoa. My daughter loves asparagus so she just picks out the asparagus and chows! The garlicky tomatoes make a great seasoning to the asparagus and whatever it is served with. I would highly recommend trying this one out if you want to eat more vegetables but don’t know what to do with them. It’s extremely easy, delicious, and kid-approved!

How to make this sautéed garlic tomato and asparagus dish?
- Heat olive oil on a pan. Add the garlic and allow it to sizzle for about 30 seconds.
- Add the halved tomatoes and cook for about 5 minutes until they start to break down.
- Stir in the basil and salt. Then add the chopped asparagus.
- Cover the pan and cook for about 5 minutes, stirring occasionally. Test a piece to see if it is at the desired texture, and continue cooking until it reaches desired crunchiness.
- Remove from heat and serve alongside rice, or with your favorite meat dish.

Ingredients
- 10 oz cherry tomatoes halved, grape tomatoes also work
- 1 tbsp olive oil
- 10 oz asparagus chopped
- 1 tbsp minced garlic
- ¼ tsp dried basil
- salt to taste
Instructions
- Heat olive oil in a pan and add garlic. Allow it to sizzle before adding the halved tomatoes.
- Saute the tomatoes until they start to break down (about 5 minutes).
- Stir in the basil and salt. Then add the chopped asparagus.
- Cover with lid and cook for about 7 minutes, stirring occasionally. Test a piece after about 5 minutes to make sure it is crunchy to liking and continue cooking until it is soft enough. We like to eat ours with a bit of a crunch.
- Serve over rice or as a side to a protein.
