Epic List of 15 Delicious Vegan and Gluten-Free Breakfasts

There are days or even weeks where we get into a rut, eating the same thing over and over. Not only that, but sometimes we just get cereal or something so easy because we’re lacking the motivation or creativity to come up with a delicious and healthy breakfast. That is why I wanted to put this epic list of 15 delicious vegan and gluten-free breakfasts together, to provide you with some ideas on great breakfasts that can be easy for weekdays, or a little more involved for weekends.

Epic List of 15 Delicious Vegan and Gluten-Free Breakfasts

1. Vegan Stuffed French Toast

I love love love this recipe. Not only is it super easy, but it’s quite healthy. Stuffed french toast at your favorite diner is generally packed with a bunch of sugar and is more of a dessert than a breakfast. Vegan french toast uses a flax based egg dip in place of the eggs, so in addition to the fiber already coming from the bread, you are adding extra in the form of flaxseed! 

2. Vegan Zucchini Oatmeal Pancakes

Growing up, pancakes were almost always one of my favorite breakfast options. It was such a treat when mom would make up a batch and we could add chocolate chips or whatever syrup. As an adult now, I understand how little nutritive value Bisquik actually has. So for the days where I just want a pancake, but also want to stay on the healthy side, these zucchini oatmeal pancakes are just what I’m looking for.

3. Healthy Vegan Cinnamon Roll Oats

Another thing that takes me back to childhood are Pillsbury cinnamon rolls. When we were busy with sports on the weekends, a lot of times we’d wake up to a fresh batch of cinnamon rolls, which was always delightful. This healthy oatmeal version uses significantly less sugar and contains no refined sugar. Plus it’s quick to throw together, so it’s perfect for a busy morning. 

4. Vegan Cinnamon Rolls with Date Caramel

Back on the cinnamon roll train, these are healthy and high fiber cinnamon rolls topped with a date caramel sauce. The sauce is best when made in a high-end blender, such as this one that I have. These are free of refined sugar, and are a great addition to a Sunday brunch.

5. Traditional Fluffy Vegan Pancakes

What screams the best breakfast recipe more than some fluffy flapjacks? These pancakes are truly some of the fluffiest I’ve ever had, and I’ve been to the biggest pancake feed (it’s the world record holder for most pancakes served in a day!). I was also quite obsessed with pancakes when I was in college living on the dining plan. But these still are one of my favorite recipes, and they’re secretly vegan.  

6. Vegan Almond Joy Oatmeal

Another easy oatmeal recipe for a busy morning, these healthy vegan almond joy oats are perfect for someone who wants to indulge a bit of a sweet tooth guilt-free. Trust me on this, these won’t let you down. Plus you might even have enough left for a snack later!

7. Sautéed Garlicky Tomatoes and Asparagus

Not all breakfast recipes need to be sweet. This one is great for almost any meal, but if you’re in the mood for a savory breakfast, this one is for you! A vegan veggie dish that is served well with rice, pasta, or even on toast, this is a versatile way to start your day off with lots of vegetables. This list couldn’t be considered an epic list of 15 delicious vegan and gluten-free breakfasts without a delicious savory veggie plate!

8. Copycat Chocolate Chip Cookie Dough Larabars

This recipe is for someone who is truly in a rush in the morning. Whether it be for you or your kids, these are a hit. Make them ahead of time and they are good for up to a week in the fridge. Not only that, but they are a great snack or energy burst if needed for the morning crash. No baking required!

9. Vegan Sweet Potato Muffins

The good ol’ sweet potato. There is so much you can do with sweet potato, and these meal prep friendly muffins are no let down. They are totally customizable for different toppings and are made in a food processor or blender for ease. Your kids will love them and not even realize they’re eating a veggie!

10. Peanut Butter Banana Oatmeal

Peanut butter banana oatmeal is a healthier stovetop oat recipe that is easy to make and also vegan. Naturally sweetened and gluten-free, this recipe doesn’t disappoint. It makes enough for two servings, but can easily be multiplied to 4 servings. A great breakfast for an on the go morning or before school meal.

11. Meal Prep Chocolate Chip Banana Bread

What brunch isn’t complete without banana bread? This chocolate chip banana bread is so dense and moist it could almost be a meal on it’s own. I’m a huge fan of thick fruit breads because to me they’re almost like brownies which are equally delicious. This recipe is one that you can make and eat for several days, or share with a big family! 

12. Vegan Mashed Sweet Potato Breakfast Bowl

If you aren’t a fan of oatmeal, don’t fret! This mashed sweet potato bowl is a great alternative to the filling option like oatmeal. This bowl is great because the toppings are fully customizable so you don’t have to buy anything special to throw on top. Any fruit, granola, chocolate chip, nut butter, nuts, etc work great. It is also great for meal prep and leftovers so you don’t have to make fresh mashed potatoes on the daily.

13. Gluten-Free Sweet Potato Pancakes

Like I said, sweet potatoes can really be used for so many things, and these gluten-free sweet potato pancakes don’t disappoint. When I say best breakfast recipes, I mean it! They are healthy, free of refined sugar, and contain no flour, making them grain-free. If you’re stumped on what to do with those sweet potatoes, here’s a great option. 

14. Blueberry Banana Chocolate Chip Baked Oatmeal

Baked oatmeal is one of those things that is just heavenly. You make a delicious batch of oatmeal up that can be stored in the fridge and enjoyed all week. I love to treat my guests to this when they come to stay for a weekend because it’s almost always a hit with everyone, and it’s secretly healthy, even if it doesn’t taste that way!

15. Best breakfast recipes: Guacamole (on toast)!

So if you haven’t gotten on the avocado toast train, you really should. It’s delicious! And an easy yet satisfying breakfast. This guacamole recipe is great on toast and adds a bit of a twist on the traditional avocado toast. Just toast your bread and top with this guacamole, and bam! Talk about best breakfast recipes!
