Cinnamon rolls were a favorite of my childhood, but as an adult understanding more about nutrition, I am a lot more aware of sugar added to foods. Knowing how unhealthy typical cinnamon rolls are, I really don’t eat them anymore. Finding healthier alternatives or low sugar options has been a lifesaver. These rolls are super easy, require no rise time, and are a great ‘treat’ to give small kids because they are free of added sugar!

Another thing I love about this recipe is that it is quick to make. You can have a fruity cinnamon roll put together in 30 minutes, without using store-bought dough. Being it is made with just a few healthy ingredients, it’s also something you can give babies and kids guilt-free. I top mine with a homemade date caramel (check this post out for the recipe).

What you’ll love about these healthy 4 ingredient fruit rolls?

  1. They are free of added and refined sugar. Healthy ingredients make these a perfect alternative to the high fat and sugar traditional cinnamon rolls and are a great breakfast treat to feed kids and even toddlers. 
  2. Vegan friendly. Though these are made with Greek Yogurt, you can easily substitute a soy or coconut based yogurt to make these vegan. 
  3. Quick to make. Traditionally cinnamon rolls take at least an hour or more to make, but being this uses self-rising flour or baking soda and baking powder, you can skip the rising times and go right from mixer to oven!

How to make these healthy 4 ingredient fruit rolls?

  1. Preheat the oven to 350ºF. In the bowl of a stand mixer, mix together the flour and yogurt. If you don’t have self-rising flour, mix in 1 tsp of baking soda and 1 tsp of baking powder. If you don’t have a stand mixer, you can do this by hand but it will take a little elbow grease. 
  2. Mix and knead until the dough forms a ball and is tacky. It might be a little sticky but you should be able to handle the ball without your hands getting totally covered with dough. If you grease your hands, it shouldn’t stick. If it does, add 1 tbsp of flour at a time until you get that consistency. The amount will vary based on the yogurt. 
  3. On a floured surface roll the dough into a rectangle slightly larger than a piece of legal paper.
  4. Sprinkle the cinnamon and optional sugar on the dough and spread it around the dough. Top the dough with the mixed berries.
  5. Roll the dough long ways to form a long cylinder. Cut the roll into 1.5″ pieces. Place the dough pieces in a greased baking pan. Make sure not to pack them in so there is room for them to expand while they bake.
  6. Bake for 20 minutes. Remove from heat and top with a drizzle of choice. Enjoy warm. Some options include traditional cinnamon icing, date caramel, fruit compote, maple syrup, or whatever else you’d like!

Mixed Berry No Rise Rolls

These no rise rolls are just 4 ingredients, are free of refined sugar and added sugar, and require no time to rise. You can make the dough, bake and be eating in about 30 minutes! They are unsweetened, but go great with any icing or caramel drizzle, or you can even toss some coconut sugar in with the filling!

Ingredients
  

  • 1 cup self-rising flour plus extra if needed for the dough
  • 1 cup greek yogurt
  • ½ cup frozen mixed berries
  • ½ tbsp cinnamon up to 1 tbsp depending on your liking
  • optional coconut sugar mixed with cinnamon

Instructions
 

  • Preheat the oven to 350°F.
  • Start by mixing together the yogurt and flour. If you don't have self-rising flour, substitute wheat flour and 1 tsp of baking soda and 1 tsp of baking powder. This works best in the bowl of a stand mixer with a dough hook but you can do it by hand as well.
  • The dough is ready to roll once it has formed a ball, is tacky but not super sticky where it sticks to your hands (a small amount is fine, but it should be able to be handled without totally coating your hands). If it is too sticky, add additional flour 1 tbsp at a time. The total amount will vary some based on the yogurt.
  • Sprinkle flour on a flat surface and roll the dough into a rectangular shape. It doesn't need to be perfect, but it should get about ¼" thick and a bit bigger than a standard sheet of paper.
  • Sprinkle the cinnamon across the dough and use your fingers to spread it evenly. Add more or less to your liking, I like cinnamon so I always opt for more. These rolls are NOT sweet without the addition of icing so if you want sweeter rolls add sugar to the cinnamon filling now. 2-3 tbsp would be a good amount.
  • Sprinkle the mixed berries across the dough now. You can use fresh or frozen (I prefer frozen because you don't have to buy multiple types of fresh). You can also opt for just one type if you like. If you have any really big berries, try to cut them down because it makes it hard to roll the dough.
  • Once the berries are spread, Roll the long side of the dough to form a long dough log. Cut the rolls about 1.5" in width (about 1.5 knuckles length).
  • Grease a round baking pan (or a half cake pan) and place the rolls in. Don't squish them together since they will grow in the oven.
  • Bake for 20 minutes.
  • Remove from heat, top with icing, caramel drizzle, maple syrup, cocoa butter, or other topping of choice and enjoy warm!
