When you’re at work and feeling like death, take advantage of sick time and go home to rest. I was surprised to find I was hungry being the crazy headache and nausea I was experiencing all morning (no this is definitely not the same as morning sickness)! I needed something that was easy and not too much for my belly.

That is when I decided to make a quesadilla. Lucky for me, we have tortilla shells, red pepper, onion, and shredded cheese at home. I had no intention of going to get food or anything from the grocery store for that matter. So far so good!

It’s been another week that’s been very crazy. This little one in my belly has been going absolutely insane all week, which is pretty cool but also includes some pain. All the more reminders how soon we’re going to meet her. The guys at work were betting it’ll be 2 weeks from now. Thinking of it in that light is enough to freak a person out a bit, but it’ll be great. New chapter of life coming soon!

With our director retiring as well as finding out my temporary coverage is starting next week, this week has been quite crazy. By the time I get home I’m usually beat. I did manage to throw together some delicious roasted broccoli and panko crusted tilapia the other day as a special treat for the hubbs and I, but my desire to cook after work is fading fast as is the view of my toes.

I am excited for some more weekend meal prep coming up though. We’ve got about 26 meals prepped in the freezer now and I have another 4-8 planned for the weekend. That as well as meal prep for the week. Up on the menu is some spinach enchiladas, aloo gobi, lentil tortilla soup, and any of my husband’s special requests. Hopefully he has something in mind because with the heartburn I’ve had the last couple days nothing sounds good. 😛

Anyway – back to the quesadilla being that’s what this was about.. We tried out a new tortilla that is high fiber. When we compared there was at least a 5 gram per serving difference. Right now I need all the fiber I can get, so we gave them a shot. They’re Ole Xtreme Fiber Tortilla Wraps, and surprisingly, they’re quite soft. Ideally I’d make my own tortillas at home, but at 35 weeks pregnant, it’s a feat I’m happy to be in the kitchen at all.

Vegetarian Quesadilla

Prep Time: 2 minutes
Cook Time: 7-10 minutes
Total time: ~10 minutes
Yield: 1 quesadilla

Ingredients:

2 tortilla shells
1/3-1/2 cup shredded cheese – Mexican or Monterey Jack (or more if you want to make a super cheesy quesadilla!)
1/4 diced red pepper
1/8 diced onion
1/4-1/2 cup salsa or guacamole

Optional Garnish: pinch of cilantro

Directions

  1. Heat pan over medium heat
  2. Add one tortilla shell and spread cheese evenly to edges of tortilla
  3. Sprinkle diced vegetables on the cheese
  4. Place second tortilla over the cheese and vegetables
  5. Heat until cheese starts to melt, check occasionally by lifting the side of the top tortilla
  6. Flip when most of the cheese appears to be melted
  7. Allow tortilla to crisp and cheese to be melted and elastic texture
  8. Remove from heat and garnish with cilantro 
  9. Cut into 6 pieces
  10. Serve with salsa or guacamole (or both!)

This recipe is one you can play with yourself – adding or not adding as many vegetables and cheese as you would like. I used to eat these with guacamole, but since getting pregnant I’ve had to eliminate avocados, so I find they are also very tasty with salsa. Give it a kick with some spicy salsa!
