One of my favorite things about social distancing is that we’re staying home for meals more. Cooking is one of those things that I find to be therapeutic and calming, so being able to cook for my family is something that I enjoy. I’ve been playing with food a lot lately with a one-year old that is into a few vegetables and not others so we’re finding some foods she really likes! This post of 10 delicious vegan dinners are some of our current favorites and hopefully, you’ll find one you’ll like too!
1. Vegan Butter Chicken (Chickpea and Cauliflower Curry)
A delicious vegan curry dish, ‘butter chicken’ is a creamy spiced sauce with curried chickpeas and cauliflower.
2. Teriyaki Chickpea Bowl
This delicious vegan bowl is packed with plant-based protein, and is simple to make. It’s better than Chinese takeout, and is made with pantry-friendly ingredients!
3. Instant Pot Dal Tadka
Dal tadka is an Indian restaurant staple lentil curry that can be easily made at home. Aside from fresh onion, everything else can easily be made with pantry friendly ingredients making this a quick and easy meal!
4. Vegan Bean Tortilla Soup
Bean tortilla soup packs all the flavors of chicken tortilla soup without the chicken. It’s a quick meal that is hearty and will keep you feeling satisfied.
5. Vegan Green Spring Bowl
Inspired by a small hip cafe in town, this vegan spring bowl is a high end meal made SIMPLE. It’s easy to make and seriously contains so many healthy nutrients, vitamins, and minerals. Plus it’s delicious. Talk about a win-win!
6. Spicy Sheet Pan Sriracha Veggie Bowl
If you have some vegetables to use up, this sheet pan meal is great for cleaning out the fridge. Toss in a simple sriracha sauce, roast, and serve over a bed of rice or quinoa. Healthy plant-based protein without the headache.
7. Corn and Chickpea Street Tacos
Simple corn and chickpea street tacos are a great EASY taco recipe. Pantry friendly ingredients are roasted and topped with a simple avocado dressing.
8. Slow Cooker Lentil Quinoa Sloppy Joes
An easy dump and go recipe that works in a slow cooker or Instant pot. This recipe is great for big families, meal prep, or making some to freeze. Delicious, easy, and packed with plant-based protein for a satisfying meal.
9. Aloo Mutter Potato and Peas Curry
This Indian dry potato and peas curry is an authentic curry that you will find on many Indian buffets. It’s a cheap meal that will feed a family, reheats well for meal prep, and is filling.
10. Easy Vegan Chili Mac (Mexican Taco Pasta)
Mexican chili mac is a vegan comfort food that is a great mend of American and Mexican food. It’s easy to make and is filling as well as satisfying. This is great for meal prep and makes enough to feed a large family.
