So if you have followed me at all, you probably know that I love to recreate the most popular cold coffees from Starbucks. The pumpkin cream cold brew has been on my agenda but I just really struggled getting that flavor without overdoing the pumpkin, or ending up with too much spice. The food scientist in me says the particle size of traditional storebought ground spices is just too big to disperse well in drinks like this, but that’s just an educated guess. The granules in the bottom of the drink are a total turnoff. That’s why I’m super excited about this recipe, because it has a good balance of flavor, not too much spice, and not too strong of coffee flavor.

Sadly I had to stop drinking my daily coffee, which is why this recipe has taken so long to get up. If I drink this stuff daily, I end up with some crazy heartburn and nausea. It was so bad one day I ended up with some crazy motion sickness in the car to the point where we cancelled all plans and just went home. But my love of coffee has not gone away, so I make it an occasional treat, and this sure is a great fall treat! Starbucks does it pumpkin well, but that doesn’t mean they’re the only ones.

  1. It’s a great copycat recipe that’s easy. Just 5 ingredients to make this recipe that tastes just like Starbucks!
  2. Easy to make. This doesn’t require a special frother or anything, just a whisk (or immersion blender or mixer if you have one with a whisk attachment), but it can be done with a whisk.
  3. Great fall flavors. Who doesn’t love the flavors of fall? Pumpkin, apple, and squash are all the flavors, and here you go with a cold pumpkin coffee.

How to make this copycat pumpkin cream cold brew?

Vanilla Syrup
  • Make the vanilla syrup by heating sugar and water in a pan over medium heat. Whisk until the sugar dissolves, then remove from heat and stir in the vanilla.
Make the Pumpkin Cream
  • In a bowl or cup, whisk together the half and half, pumpkin puree, and pumpkin pie spice (you can sub ½ tsp cinnamon, ⅛ tsp cloves, ⅛ tsp nutmeg, and ⅛ tsp allspice for the pumpkin pie spice).
  • Whisk it together until it’s started to form a foam. It won’t get thick like whipped cream, but it will get a bit light and airy. I use an immersion blender but a hand mixer or stand mixer would work as well.
Assemble the drink
  • In a mug or glass, place ice and 2 tbsp of the vanilla syrup.
  • Pour the coffee in over the vanilla. Top with the pumpkin cream. Stir together and enjoy!

Ingredients
  

Vanilla Syrup

  • 4 tbsp sugar
  • 4 tbsp water
  • 1 tsp vanilla extract

Pumpkin Cream

  • ½ cup half and half
  • 1 tbsp pumpkin puree
  • ½ tsp pumpkin pie spice

Pumpkin Cream Cold Brew

  • 2 tbsp vanilla syrup per serving
  • 1 cup cold brew coffee follow directions of your cold brew maker or concentrate if they require dilution; for two servings use 2 cups of cold brew
  • 4-5 ice cubes

Notes

This recipe is a bit extra creamy, but you can cut down the half and half a bit to get a stronger coffee flavor. You could also use milk in place of the half and half but don’t expect the foam to form, it’ll stay liquid.
