Meal prepping? Making your staple main course and need a good side dish? Whatever the reason, quinoa is a fabulous alternative to rice and other high carb dishes. Our favorite uses for it are to top salads, and to make a broccoli chickpea quinoa dish.
If your house is anything like mine, we like to have food ready to grab after a long day of work. What better way than to prep this ahead of time. We always have a bowl in our fridge to throw on a salad.
Cooking quinoa is one of THE easiest things to make in the world. We like to make it with vegetable broth to give it more flavor, or water and seasoned salt.
Cooked Quinoa
Servings: 4
Prep Time: 2 minutes
Cook Time: 15-20 minutes
Total Time: ~20 minutes
Ingredients:
1 cup quinoa
2 cups broth/water
Optional – 1/2 tsp Lawry’s seasoned salt
Directions:
- Place quinoa and liquid in pot
- Bring to boil
- Once it’s boiling – drop temperature to low and simmer for about 15 minutes
- To check if it’s done, tilt the pot and if the quinoa doesn’t move or no liquid is visible, it’s done.
- Serve fresh, or store in an airtight bowl in the fridge.
