Greek Power Salad

Ever been craving greens, or wanted greens but not wanted the flavor? This salad has become a go-to in our house since it’s SO delicious, and incredibly easy.

Have you had the Modern Greek Salad with Quinoa from Panera? Well I have, too many times. After the first time trying this salad, I probably went back to get it 10-20 times before taking matters into my own hands.

I looked up the ingredients and figured I could make something similar but to my own liking at home, and it would be much more affordable! Right I was. And my husband was very happy because he also loves these salads.

Best thing about them? If you meal prep the quinoa ahead of time, they take less than 5 minutes to throw together! Voila – dinner in a jiffy for those on-the-go days.

Prep Time: 20 minutes
Cook Time: 5 minutes
Total Time: 25 minutes

Ingredients:

2-3 cups greens (I use a mix of arugula and kale), but spinach and romaine are also good options
1/2 of a cucumber, diced
2 tbsp kalamata olives, halved or quartered are fine
2 tbsp feta cheese
1/4 cup quinoa, cold if it’s been prepared prior to day of assembly
2 tbsp toasted sliced almonds
2-3 tbsp greek vinaigrette dressing (Kraft or Panera if you can find it are good) – also good with Italian vinaigrette 
optional: chopped sun-dried tomatoes

Preparation:

  1. Cook quinoa (I make a larger batch of 1 cup uncooked) – for directions check out this post!
  2. place greens in large salad bowl
  3. add diced cucumber
  4. toast almonds (can do in microwave – 10 second intervals until they start to brown)
  5. add almonds, feta, quinoa, and olives
  6. mix all together
  7. add dressing
  8. Enjoy!

Vegan option – omit cheese, and ensure that dressing is free of feta.
