10. Easy Fresh Pico de Gallo
Pico de gallo is so great and this fresh garden pico de gallo is made with just a couple ingredients and just a few minutes of prep time. A great topping for tacos or burrito bowls, or dip for tortilla chips.
Vegan pumpkin pie oatmeal is delicious and super quick. Pumpkin pie oatmeal is healthy and kid approved, so whip up a batch for your next morning breakfast.
Mashed sweet potatoes are a great alternative to chia pudding or oatmeal. It’s great to make ahead of time and have ready in the fridge. Top it with any of your favorite toppings (blueberries, coconut, mixed seeds or nuts, peanut butter, chocolate, banana, chopped apples).
